The cheeses of this region are a treat for taste buds: soft and creamy flavour for the Pilat log, a pasteurised cow's cheese. The Rigotte de Condrieu is a speciality that has been protected since 2009 by a PDO limiting its production to the territory of the Pilat Regional Nature Park. Freshness and smoothness for the white cheeses and faisselles served for dessert or flavoured with garlic and chives to obtain the tomme daubée, better known in the Lyon region as "cervelle de canut", without forgetting the famous Pavé d'Affinois, made from cow's, goat's or ewe's milk and produced by the Guilloteau cheese factory in Pelussin.
